Cold — Bloodborne
Cold — Blood gems, Bloodborne. Read the Arcane scaling coefficient and compare it with a percentage damage gem.
The number to interpret
A Cold Abyssal adds +65 Arcane scaling, or +0.65 to the coefficient. It does not create elemental damage by itself: for a weapon you want to convert, add a gem that provides fire, bolt or arcane damage.
Compare with the same stats
Keep the same upgraded weapon, stats and move. Replace one gem at a time, then compare attack and damage against the same target.

Gem effects and acquisition
Adds a coefficient to Arcane scaling.
An elemental component must already be present or supplied by another gem.
Added coefficients are summed with the native coefficient. The resulting attack gain then depends on your stats and the weapon's base damage.
